Pickle or chutney laid on the table during meals increases hunger as well as the food's taste. There are numerous types of pickles which are made in different ways. Some pickles have a shelf life up to 1-2 years while some are made according to the ongoing seaso and are eaten in 20-25 days. Stuffed Mango Pickle
Cutting whole mangoes is the hardest part. Mangoes are cut with a Sarota while preparing Stuffed Mango Pickle, which i have seen with my sister when i was little but i haven't used it till date. I think this is mostly found with those who sell mangoes. So its best to get medium sized mangoes for Stuffed Mango Pickle and ask the seller to cut them for you. These mangoes can also be cut at home using a knife and something heavy to hammer it, i have followed this method of cutting mangoes at home. For Bharwan(stuffed) Mango Pickle we need to remove the stems of the mangoes and cut the mangoes from top so that they remain attached at the base.
Bitter gourd Pickle can be made in either way: Stuffed bitter gourd or bitter gourd cut into pieces.
We need small sized bitter gourds to make stuffed bitter gourd pickle and for the pickle that is cut we can use small or long bitter gourds. Today we will make the pickle using long bitter gourds cut in thin strips as this is very easy to eat. For those who eat less pickle, we can use 1 or 2 pieces of bitter gourd.
