Pour milk into a kadhai with a thick base and turn on the gas. Once the milk comes to boil, stir it with the help of a spoon and boil till the level of milk decreases. Stir milk using the spoon regularly to avoid it from sticking to the base of the kadhai.
Cut cashew nuts into 7-8 pieces and leave 4 whole cashew nuts which can be used for garnishing the Kheer. Wash raisins and break off the stems. Chop pistachios evenly, peel elaichi and grind.
Wash,peel apples and after removing the hard mid portion,grate them.
Add baking soda to boiling milk and mix well, then add grated apples.Now keep stirring the kheer till it comes to boil.
As the kheer gets thicker and the apples are cooking and the two become indistinguishable,add dry papaya and sugar. Cook kheer for 2-3 minutes more while stirring regularly. Apple Kheer is now ready, turn off the gas. Add crushed cardamom to kheer and mix.
Pour the kheer into bowls and garnish with finely chopped pistachio and cashew nuts. Apple Kheer can be served hot or cold as desired.

If Apple Kheer is being made for chidren below the age of 2 years then do not put dry papaya in it.
